Pasta in avocado cream with peas from Talm Goat

Ingredients

    • 1 single avocado roll, peeled, cored and roughly chopped

    • 40 grams of butter can be converted into a vegan version with 3 tablespoons of olive oil

    • ½ package pasta of any type you like, long pasta such as linguini or spaghetti is recommended

    • 2 tablespoons olive oil

    • 3 chives, peeled and thinly sliced

    • 1 teaspoon dried oregano

    • A handful of frozen green peas, at least 100 grams

Preparation

How do you make pasta in avocado cream with peas from Goat Telam?

  • 1 Put the avocado and butter in a tall glass and grind with a hand blender to a smooth cream.

  • 2 Cook the pasta 1-2 minutes less than the manufacturer's instructions.

  • 3 Filter and save at least 2 cups of the pasta cooking water.

  • 4 Put the garlic cloves and olive oil in a wide pan.

    Fry over a high flame for about a minute or until the garlic softens.

  • 5 Add the dried oregano, the frozen peas, the salt and one cup of the pasta cooking water.

  • 6 Cook together for 2 minutes, until the peas soften a little and retain a bright green color.

  • 7 Add the avocado cream and butter and mix well.

    Add more pasta cooking water gradually, until the sauce is liquid and slightly thick (like the texture of sweet cream).

  • 8 Add the cooked pasta and mix well.

    Cook until the pasta is well coated in the sauce and is cooked to your liking.

    Taste and add more salt to taste and serve immediately.
