What is an echalion?
It is a cross between onion and shallot.

Scallion or shallot: how to recognize them?
They both belong to the Alliaceae family and both have a coppery exterior color.
For the shape, the échalion, nicknamed shallot chicken thigh, is more elongated and oval and has only one bulb (or caïeu), against two or three for its sister, more rounded.
In addition, its base is smaller and hairier.
In the garden, the shallot is produced by sowing, while the shallot is planted.
Regarding the flavor, it is less fragrant than the shallot, it is closer to that of the onion and sweeter.
And it has an advantage: it doesn't make you cry when you peel it!
