The Centre for Food Safety of the Food and Environmental Hygiene Department announced today (May 5) that a sample of edible ice cubes prepared at the premises of a restaurant in Shek Tong Tsui was collected for testing.


The Centre for Food Safety of the Food and Environmental Hygiene Department announced today (September 5) that a sample of edible ice cubes prepared on its premises was taken from a restaurant in Shek Tong Tsui for testing. The result showed that the coliform content of the sample was 150 colony-forming units per 100 ml , its content exceeded the "Guidelines for Microbiological Content in Foods", the Center is following up the incident and has instructed the restaurant to stop using the ice cubes in the accident.

It is understood that the shop involved is a branch of the fast-food restaurant chain Café de Coral on the ground floor of Hong Kong Commercial Center, 186-191 Connaught Road West.


A spokesman for the CFS said that, through its routine food monitoring programme, the CFS collected samples of edible ice cubes made on its premises from a restaurant in Shek Tong Tsui for testing.

According to the Guidelines, the coliform content guideline for bulk edible ice at retail outlets is less than 100 colony-forming units per 100ml sample, i.e. the sample exceeds the standard by 50%.

The CFS said that the coliform bacteria levels exceeded the guidelines of the Guidelines, which indicated that the hygiene conditions were poor or not paid attention to during the ice making or handling of ice cubes, but it did not mean that food poisoning would be caused.

The spokesman pointed out that the CFS had notified the restaurant concerned about the above-mentioned violations and instructed it to suspend the sale of frozen drinks containing ice cubes. The restaurant is also required to review and improve production processes and conduct thorough cleaning and disinfection.

The CFS urges the trade to follow the "Hygienic Guidelines for Manufacture and Handling of Ice Cubes in Restaurants" and adopt good hygienic practices when handling ice cubes.

The CFS will continue to follow up on the incident and take appropriate actions to safeguard food safety and public health.
