There is no question for the Lyonnais to abandon the mâchon for brunch!
First of all, brunch is an English import of breakfast (breakfast) and lunch (lunch), while mâchon is indeed French – deverbal of mâchonner, derived from mâcher, from the Latin
mastico, are
(to chew).
The mâchon is a snack served early in the morning, usually in the "bouchons" (traditional restaurants in Lyon).
It is generally made up of pork – canut brains, sapper apron, Lyonnais tripe and grattons, Beaujolais andouillettes, andouillettes pulled with string;
this “light” snack is washed down with pots of Beaujolais or Mâconnais.
Historically, the mâchon has been popular since the 1850s and consists of sharing a meal with reheated leftovers from the day before: hot or cold pork, salads, lentils from Puy, andouillette, potatoes, sapper apron... in short, the whole Lyonnaise cuisine in its broadest and most generous definition.
The mâchon had two practical aspects: it avoided throwing away the lunch or dinner of the day before while allowing both workers and bourgeois to gather in the same place.
Some canuts even took advantage of the moment to negotiate orders or prices
