When we think of muffins, we usually think of a sweet treat, but it really doesn't have to be that way.
These muffins contain two types of cheese, different vegetables (carrots, zucchini and peas) and even the eggs have already been put inside.
The result is a wonderful and nutritious dinner (or breakfast), in an aesthetically pleasing and enjoyable way, that no child will be able to refuse.
Now during the summer holidays, when you spend a lot of time outside, this is also a great option to take to picnics, to the garden and on trips, just before you are tempted to give the children another industrial snack, give them a fun muffin, which contains only good things.

Ingredients
1 coarsely grated carrot
1 zucchini coarsely grated and drained of liquid
½ frozen, thawed tender cossapuna
1 small onion, roughly chopped
Cream cheese with olives (200 grams)
Teaspoon of salt
½ cup buckwheat flour
3 eggs
2 tablespoons chopped chives
150 grams pataki cheese (Greek feta style), crumbled

Preparation
How do you make cheese and vegetable muffins?
1 Beat together the eggs with the salt, chives and cheeses.
2 Add the rising flour and mix.
3 Add the vegetables and mix.
4 Grease a mold, fill about 3/4 of the height of the dish and bake in an oven preheated to 180 degrees for about 30 minutes until golden.
