The production of AOP Salers cheese is stopped from Friday August 12 for an indefinite period according to information from France Bleu Pays d'Auvergne.
Due to the drought, cheese producers can no longer apply their confectionery specifications, in particular the section indicating that cows must eat 75% grass from pastures.
