"The Galil variety, the first avocado that starts the avocado season, is recommended to be bought only after August 20th, and before it goes on the market it needs to be tested for fat percentages," explains Nimrod Tishler, director of avocados at the Galil company.

How do you choose the right avocado?
"This year there was a lot of harvest and we could see avocados in stores almost all year round, because of this we enjoyed avocados even in the summer at a reasonable price, but this is not always the case. Usually the avocado season opens with the Galil variety, on August 20 as mentioned, followed by other varieties such as the Ettinger avocado , and towards the winter the Hass avocado (with the black skin) is all a matter of when to plant and when to harvest," explains Tischler, "Each variety has its best ripening period, so for example you will see the Galil variety on the shelves in the next month and another variety will follow. Each variety is picked in his time".

Tischler added that when choosing an avocado it should be smooth, large, and beautiful and should have a "click" - even if it is hard.
"You can buy a hard avocado and it will soften, in fact any avocado will ripen, there shouldn't be a situation where an avocado doesn't ripen, only if you pick it and market it ahead of time," added Tishler, and emphasized again that it's worth buying the right variety every season.
"We guarantee that the avocado has passed all the necessary tests and the fruit is ready for marketing so that it reaches you at its best," he said.
The Galil avocado can be identified by a sticker on the fruit with the symbol of the scarecrow from the Galilee.
"At the Galil company, we make sure to pick each variety according to its ripening time, after it has passed the tests we conduct according to European standards, because we also export the fruit," added Tishler, "we constantly perform laboratory tests, take samples from each plot and constantly check when it is possible to pick and when You can market the avocado so that it ripens."
Since avocado is much more than a treat, but a real health bomb, it is important to choose an avocado that will really ripen and be edible, not one that will stand in your kitchen until it turns into inedible rubber.
"It is important that you trust the place you buy the avocado from," concluded Tishler.
