Those who cherish memories of small, legendary and magical Tel Aviv surely relish in their memories of the taste of Margaret Thier's stuffed and fried sardines.
Not only the forgotten taste was detailed in every vein of the heart, but also the collective image of the small house in Jaffa, in front of the waves and on the seashore, around the random tables in its courtyard - we experienced, years ago, the rise of our local, personal and intuitive cuisine - of which we are so proud Today.
As a girl from Tel Aviv, there is a whole chapter in my story dedicated to Margaret Thier.
I don't know how much I appreciated the unique glimpse into a world that will disappear as I grow older.
I commemorate in my culinary development the simple charcoal grill standing outside on the sand.
The sitting on plastic chairs and the feeling that the whole evening depends on Margaret's mood.
I remember my father quietly whispering in my mother's ear "I wonder how she is today and how much it will cost us."
Today we like to describe the mix of emotion and food as culinary poetics.
But such peppery headlines did not suit Margaret Thier - what the old man and the sea brought to her door, combined with the mood in which she got up one morning, would be the menu for that evening.
Why?
That's right Margaret.

Margaret Thayer did not cook methodically or didactically.
She had no plans or intentions.
She is a free and wild soul who cooked according to her intuition what the sea gave her and what she decided to adopt for herself from her childhood tradition.
According to many of us, the mature generation of the Israeli culinary world, Margaret Thier is a path mother, a founding mother and the importance of her legacy is supreme.
Therefore, on Tuesday evening of the week, they gathered at Chef Haim Cohen's Jaffa-Tel Aviv restaurant, Hila Alpert and Little Tel Aviv Shuai - to celebrate Margaret Thier's kitchen.
Chef Haim Cohen and Hilla Alpert worked together on recreating the dishes, their taste and uniqueness and served the delicious and important heritage of a tourist during just one evening.
