Talfiot market in Haifa is one of the most popular places among those who come to take a walk in the city, and now, when a new and promising cocktail bar has opened there, it gets a much-needed refresh.
"Baatu" was opened by chef Guy Rosemarin ("Taizou", "Santa Caterina", "Roberta Vinci") and Maya Hamra ("Raphael", "Taylor Maid", "Tea House"), who have quite a background in the field The food and alcohol.
The uniqueness of the place is in its cocktails, based on homemade syrups that are poured into a glass straight from a barrel, and also in the food that consists of raw materials that come from the market in the city's Hadar neighborhood, which means that the menu in the place is not fixed - and changes according to the season and depending on the goods of the fishermen.
Dishes that can be found on the menu are herbal tea vinaigrette and sea salt, beef tartare (variable portions), burnt eggplant, Egyptian Tobia salad and anchovies Ortiz, roasted sheitel-thinly sliced sheitel, rocket leaf salad and figs, cherry tomato carpaccio, finely marinated sea fish and more.
And in cocktails?
There's Mu'avet (hibiscus and rhubarb infused gin with homemade tonic syrup), Peach Brass (Anijo tequila, peach syrup, citrus mix and red grapefruit tonic), Be.eito Mule (vodka, seasonal homemade syrup, ginger beer and lemon juice), and more.
Of course there are also cocktails that are mixed on the spot using the classic method.
