Make a strawberry pie: which dough to choose?
To make a strawberry pie, you have two options: choose shortbread or shortcrust pastry.
The shortcrust pastry is incarnate gluttony: a melting and crispy pastry with a good taste of butter.
But although delicious, this recipe still requires a bit of technique.
Too little worked, the shortcrust pastry will be too crumbly.

It can easily be baked "blank" before being garnished and holds together without breaking, provided it is not rolled out too thinly in its mould.

Blame it on a pie crust soaked with the juice from the fresh fruit.
But how do you make a presentable strawberry pie?
Here are some rules to follow:
Use shortcrust pastry:
made of flour, sugar, eggs and butter, this very simple dough to make by hand or in a food processor has the advantage of resisting humidity, thanks to the presence of eggs.
Bake the dough blind:
line the mold with the dough spread out to a thickness of 2 to 3 mm and cover the dough with baking paper.
Pour over beans-type pulses or baking beads over the entire surface.
Bake for ten minutes between 180 and 200°.
The dough must be cooked without having (too) colored.
Line the bottom of the pie with an ingredient that makes it waterproof:
there are many possibilities for this.
Chocolate chablonnage consists of coating the blind-baked dough with a thin layer of melted chocolate.
Use white chocolate for a more aesthetic result, but no less greedy or effective!
The pastry cream is a great classic: it also allows you to isolate the strawberries from the bottom of the pie.

How to store a strawberry pie?
Strawberry pie will keep in the fridge for up to two days, especially if the pie is made with pastry cream.
Leftover pie can be kept in a dish covered with aluminum or foil or in an airtight container, but unfortunately the ideal solution does not exist: condensation may form and therefore soften the dough, not to mention the juice. strawberries that will spread… All the more reason to devour the remaining portions as quickly as possible!
