Rosh Hashanah is a time of self-reflection, of repentance, a kind of "recalculation of one's own course", introspection and a return to the sources.

In financial terms, this is called "budget versus performance" - an internal personal review of what we did during the year and where we want to go.

You don't need to be afraid of the term "repentance", nor get stressed.

This is a natural and correct process, which allows us to develop and grow. Even in wine, more than once during the year we try to squint left and right, to find innovations and variations, exotic varieties and rare wines - and that's fine, but in the end we have to admit that most of the demand in Israel, as well as in the world, is For the classic wines - Cabernet Sauvignon, Merlot, Chardonnay and the like.

And at the same time, it turns out that the wines produced from these varieties can also be exciting, happy and innovative, whether in the production methods, whether in the growing areas, or in the final result.

Just like the word "change", which on the one hand means to change, i.e. to repeat the same thing again, and on the other hand - to change.

So, in honor of Rosh Hashanah, which is coming up, we decided to go back to the sources and focus on exactly these wines, from the classic Bordeaux varieties but new on the shelf, and from them we chose the ones that particularly moved us, that renewed us, and that will undoubtedly make our holiday table happy. Happy and sweet New Year.

Chardonnay "Camilia" 2021, Flam Winery

- Camilla is the mother of the Flam brothers, who works with them at the winery and according to them serves as their inspiration.

The wine is made from Chardonnay grapes (80%) from a plantation vineyard in the Jerusalem mountains, and from Sauvignon Blanc from Nahal Hakhaleel.

The clusters were squeezed whole, and the juice was transferred to fermentation in oak barrels, most of them 500 liters, where it continued to mature for about seven months.

A great nutty nose of cheesecake, lime and apple, and the barrel characteristics are also evident in the mouth - but not at the expense of delicate acidity and greenish fruits.

Plantation Chardonnay 2020, Tulip Winery

- 100% chardonnay from the winemaker's series, also here from a plantation vineyard.

The wine fermented and matured in 400 liter barrels for about six months.

The nose is expressive and pleasant, and combines lemons, orange peel and green apple alongside vanilla and butter.

Light tropical flavors are also added in the sip.

The body is broad and oily and the acidity is emphasized.

Not cheap, but very impressive.

Merlot 2019, Mountain Heights, Tora Winery

- the source of the fruit is in the Har Bracha vineyard, and it matured in barrels for about 22 months.

The color of the wine is dark burgundy, with pleasant red fruit on the nose (ripe plum and pomegranate) alongside fresh mint.

In the mouth it is tannic and young, with a medium-plus body, acidic and elegant.

Rich with maturing potential.

Dvir, Cabernet Sauvignon Single Vineyard 2020, La Foura Blanche Winery

- for the purity of the variety, from vines more than 20 years old that grow in the Sde Kaleb vineyard, near Kiryat Arba.

Its color is a beautiful dark burgundy.

The nose is greenish-peppery, full of aromas of black berries, cigars and dark chocolate.

Fills the mouth cavity with a wonderful fruity juiciness, with a full and complex body.

The outstanding of the tasting.

Cuvee M, 2018, Beit El Winery

- from a Bordeaux blend created by Hillel Man, the owner of the winery and the winemaker, from Cabernet grapes (58%), Malbec (23%), Merlot and Petit Verdot, grown in Beit El Bakram Ben Half Juveal.

Pleasant and fresh nose of light cherry, red plum and pomegranate.

In the sip it is very fruity and flowing, with Belgian chocolate characteristics.

Sweet, young and fun.

Pour me some more of that.

Tefn Fortress Vineyard 2018, Kishor Winery

- a blend that winemaker Richie Davis installed in his winery in Kfar Kishorit - a village for people with special needs - from Cabernet Sauvignon, Cabernet Franc and Merlot grapes.

Each variety was aged separately in barrels for 18 months, after which they were blended into a harmonious wine.

It has a beautiful purple color, and a great nose of ripe cherry and blueberry with greenish cylindrical spice.

The acidity is good, the body is wide and the flavors are classic.

Refined wine, made according to the book.

Gofna, Cabernet Sauvignon 2020, Givat Winery

- 90% Cabernet Sauvignon from the vineyard behind the winemaker's house, and a complement of Cabernet Frank and Patty Verdot in equal parts.

Beautiful bright purple-black color, with a typical green pepper nose and tight dark fruit.

In the mouth it is powerful, with flavors of black grains, with layers that are revealed over time and a bitter and sensual finish.

Elegant wine for long distances.

Emek Bracha 2019, Gush Etzion Winery

- This time the flagship wine of the winery was made from 37% Cabernet Sauvignon, 28% Petit Verdot, 28% Syrah and 7% Cabernet Franc, hand-fortified in the Nahal Firim vineyard.

Each variety matured in barrels for about nine months separately, and after the union the screen was returned to the barrels for another year.

Intense and deep color, very dark.

Great aromas of black ash, tobacco and earth.

In the sip it turns out to be relatively soft, and at the same time very tannic.

Superb.

November 2019, Adir Winery

- from the winery's new flagship screen built from the best barrels of the vintage.

It contains 85% Cabernet Sauvignon, 10% Marcellin and a touch of Petit Syrah.

It was aged for about two years in 500-liter, extremely dense French barrels.

Dark and opaque in appearance, with a nose full of aromas of ripe black fruit grains.

On the palate, it manages to jump over the hurdle of ripeness, and shows surprising freshness and acidity along with a rich and full body.

Multi-layered in his tastes and is at the beginning of his journey.
