When it comes to the ox roast, the knowledgeable Wiesn-goer immediately thinks of hearty dishes – with meat, of course.

But in the kitchen, a star chef, who is famous for his vegan cuisine, is now swinging the cooking spoon.

Munich – Ochsenbraterei landlady Antje Haberl came up with something special for this year’s Oktoberfest: she brought star chef Sebastian Copien on board.

He became known for his fine vegan cuisine - together they developed three vegan dishes for the Wiesn, which can be found on the menu this year.

And it was worth it: in relation to the "standard dishes", 21.4 percent of vegan and vegetarian dishes were sold in the first few days.

"The demand for vegetarian offers has been steadily increasing for many years, and a few years ago the vegan version started," says landlady Antje Haberl, who also wants to make her vegan guests happy at the Oktoberfest (everything about the Oktoberfest reservations ).

Our newspaper looked over the shoulder of the chef in the kitchen of the Ochsenbraterei – by the way, the largest at the Wiesn – and together we cooked a vegan mushroom goulash with potato dumplings (15.80 euros).

That and two other vegan dishes are available this year in the Ochsenbraterei: vegan patties with sauce and potato salad (14.80 euros) and vegan bratwurst with sauce and homemade sauerkraut (14.80 euros).

Copien has been vegan for seven years.

It's not that easy to conjure up a gravy that comes close to the meaty original if you haven't eaten a roast for years.

"Fortunately, I have a very good taste memory," says the chef while preparing the ingredients for the goulash.

The idea of ​​working together came about more than a year ago when Antje Haberl hired Copien to train the staff at her company.

"I saw straight away that the employees were all really motivated and interested," says Copien.

The chemistry was right right away.

And so the idea of ​​working together at the Wiesn quickly matured.

Because even as a vegan you need a different pad in the beer tent, says Copien - especially when "everyone around you is eating chicken and roast..."


Here's vegan food at the Oktoberfest

The demand for vegetarian and vegan dishes is increasing - not only in the restaurants, but also at the Oktoberfest.

Our newspaper shows where to find vegan food:


• Old Bavarian specialties (to the right of the main entrance to the Ochsenbraterei): Leberkäs-style in a roll (six euros).


• There's also vegan food at Fischer Vroni: a vegan roll with grilled vegetables (five euros) in the street sale, and in the tent vegans get their money's worth with grilled potatoes with ratatouille vegetables.


• The Schottenhamel offers baked potato waffles with mushroom ragout (18.90 euros), the Hofbräu vegan currywurst with bread roll (13.50 euros) or three pieces of vegan white sausage (until 1 p.m. 6.90 euros).


• A crispy bag – vegetables with corn semolina in brick dough – with rocket and tomato ragout (18.50 euros) is available in the Bräurosl, for example.


• The Löwenbräu offers vegetable strudel on a tomato and basil ragout with roasted chanterelles (18.60 euros).


• The Paulaner has vegan currywurst with roasted onions and potatoes (14.90 euros).


• The beetroot dumplings (17.50 euros) in the Schützen are completely free of animal ingredients.


• In the Armbrustschützen, for example, the menu includes Bohemian stew with green lentils, carrots and potatoes (13.50 euros).


• The Herzkasperlzelt is heaven for vegans: eleven vegan dishes tempt you here – for example soy medallions in dark beer sauce with dumplings and red cabbage (17.50 euros).

Vegan food in the Ochsenbraterei: Red wine attracts the roasted aromas

So it was important that there was something hearty.

The ingredients: onions, mushrooms, not cut too small, a “pulled” based on pea protein, red wine to deglaze.

"It's best to do it often so that the roasted aromas come out really well," says Copien as he pours the red wine into his pot.

It hisses and steams, and a delicious smell spreads in the large tent kitchen.

Season well with salt, pepper, paprika and marjoram - let it simmer and you have a goulash that warms a vegan gourmet's heart.

Copien lovingly drapes a potato dumpling on top of the finished dish, topped with parsley cream – which landlady Antje Haberl in particular raves about: “I could lie in it, it’s just delicious.”
