I spent a lot of time with my grandparents like many children of restaurateurs and therefore a lot of time snacking in the kitchen, a lot of time at the table.
We always cooked home, never really noble products but always of beautiful extraction, indulgent, simple, good.
Your idea of good taste?
In my opinion, it is a matter of personality.
Something very intimate.
In terms of gastronomy, my good taste is when the cuisine does not forget to be accessible and that it is aimed at as many people as possible without ever distorting itself.
Any real change in our relationship to food must go through this.
And if this freedom rhymes with a certain impertinence, it's even better.
