30 years ago, even more, Maalot was very, very small and everyone knew everyone.

There was one commercial center with a grocery store and a few shops and there was a market on Wednesday, and that was it.

Life on the whole was simple and clear, and as a child I concluded that this is what life really is, easy.

Of course, later it became clear to me that this was not the case.

In the commercial center in Ma'alot, he had a regular "Bayzola" seat and sold from a completely destroyed baby carriage bouquets of fragrant mint, which he picked early in the morning in Nahal Monfort (Nahal Kaziv).

We, as innocent children, did not understand his plight, we did not understand that picking the mint in the morning gave him a reason and purpose for life, that mint was his whole world.

We would laugh at the wrecked wagon, not realizing that it was all his prized possessions.

Baizola is long gone, but the smell of mint will always remind me of him.

He just wanted to make a living and get his bread, and in his own way also left me memories, with smells that are associated with childhood.

The mint in our house was and still is very dominant.

We drink tea all the time, in the summer with mint and in the winter with Shiva.

But not only tea - mint as a spice plant can give a sweet and refreshing twist to any dish, especially in salads, desserts, stews and more.

Chicken with fresh and dry mint and pumpkin

Ingredients:


√ Olive oil


√ 1/2 kg chicken


√ 1 onion cut into quarters


√ A piece of pumpkin cut into large cubes


√ 12 cloves of garlic, halved


√ 1 teaspoon ras al khan or bhart


√ 1/2 grated nutmeg


√ Pinch of shata pepper


√ 1 teaspoon dry mint


√ Salt, black pepper


√ Peels from 1 orange


√ Freshly squeezed juice from 1 orange


√ 1 cup chicken stock or water

For the mint pesto:


√ 1 bunch of mint, only the leaves


√ 10 cloves of garlic


√ 1 teaspoon coarse salt


√ 6 tablespoons olive oil

• Peel the orange with a peeler.

You can use the same orange for the juice.


• The secret to good stews is to arrange the stew correctly and then let it cook, without touching it.

1. Grind all the pesto ingredients into a puree.


2. In a wide pot, fry the chicken in olive oil, until brown.

Take out and place on a plate to the side.


3. In the same pot, fry the onion until brown, add the pumpkin and garlic cloves and continue to fry.


4. Return the chicken and add spices and orange peels.


5. Add the liquids (up to half the height of the chicken).


6. Cook for about 15 minutes until the liquid is reduced.


7. Before serving, sprinkle the pesto puree on top and garnish with mint leaves.

Mint, pecan and nectarine salad

Ingredients:


√ 2 nectarines cut into eighths


√ 100 g pecans


√ a large handful of fresh mint leaves


√ a large handful of small sorrel or rocket leaves


√ 1/2 green hot pepper, thinly sliced

For the sauce:


√ 3 tablespoons olive oil


√ 1 tablespoon honey


√ 1 tablespoon cherry/raspberry vinegar


√ Black pepper in a generous amount


√ Salt

• Don't be afraid to put a lot of black pepper!

He and nectarines go great together.

1. Mix well all the sauce ingredients.


2. Put all the salad ingredients in a bowl.


3. Pour the dressing over the salad immediately before serving, mix and serve.
