The month of Tishrei brings with it not only the holidays but also the beginning of a pleasant autumn wind in the afternoon and evening and this is also the beautiful time of the honey cake.
An especially juicy and soft cake, which makes good use of the leftover jars of honey left in the pantry from the beginning of the year.
This time, seasoned with cinnamon and with a pinch of ground almonds that add flavor, a fun texture as well as beauty.
Autumnal weather like this always makes us want to put a rich cake in the oven that will fill the whole house with baking aromas, slice a thick slice and eat it alongside a warming drink by the window or in the sukkah with family and friends.

Ingredients
5 eggs at room temperature
½ cup brown sugar
1 cup canola oil
¾ cup honey
1 The glass is very dark and warm
2 cups of self-raising flour
½ tsp baking soda
½ teaspoon cinnamon
¼ almond semolina
1 cup chopped blanched almonds

Preparation
How to make honey cinnamon and almond cake?
1 Heat an oven to 170 degrees and grease a 26 cm diameter pan.
2 Beat together eggs and sugar to a light foam.
3 While whisking, add the oil, honey and tea until a uniform mixture is obtained.
4 Mix the self-raising flour, baking soda, cinnamon and almond flour in a separate bowl.
5 Fold the flour mixture into the egg mixture and at the end add half a cup of ground almonds.
Mix only until a uniform batter is obtained, but avoid overmixing.
6 Pour the batter into the greased pan and sprinkle the remaining half cup of almonds over it.
Bake for about 50 minutes until a toothpick inserted into the center of the cake comes out dry with moist crumbs.
