It would be one of the oldest fairs in Île-de-France.
At the beginning of November, (almost) immutably for 852 years, Saint-Martin takes up residence in Pontoise (Val-d'Oise).
What remains of this great traditional sale where people once came to buy their clothes, their furniture, but also to have fun?
Only one thing is certain, the smell of grilled herring still floats on the tray, like an olfactory cue which, if not to everyone's taste, has the advantage of being reassuring.
We continue to taste this fish imported from the coasts of the Channel, accompanied by local wine, the "ginglet".
According to the city, 4,500 herrings are grilled on this occasion.
For the rest, Saint-Martin had to change, a question of survival.
