Despite the shortage of skilled workers in the catering trade: Thomas Baur, head chef at the Tölz sports youth hostel, wants to set a positive example.

Bad Tölz –

The shortage of skilled workers primarily affects the catering, hotel and other tourism sectors.

During the Corona lockdowns, many people looked for jobs in other areas with more predictable working hours - without weekend or evening shifts.

But there are also people who choose the opposite path, who consciously choose a job in tourism.

Holger Strobel, manager of the Tölz sports youth hostel on the Flinthöhe, believes that one should tell their stories.

Of course he has the best example in his own house: his new head chef Thomas Baur.

The 42-year-old started working in the 186-bed facility four months ago.

"I feel very good," he says and laughs.

"You can work in a tourism profession and have fun," he adds.

Before that, he cooked for the guest casino of a Munich bank for 15 years.

Plannable working hours, free weekends: "When the children are small, you are dependent on fixed times."

Now that the three sons are a bit older, the Tölzer was looking for a new challenge - and found it practically in the neighborhood.

“Now I save myself the long commute to Munich,” he says.

Instead, he now walks to his place of work, and the sons could just stop by if they need anything.

The sports youth hostel fits exactly "into my philosophy of life", says Baur.

He enjoys working with children and young people.

The atmosphere in the eight-strong kitchen team is "positive".

It is important that the working hours with early and late shifts are divided fairly within the team, says Baur – and that the weekend is free every 14 days.

The 42-year-old is well aware that his working hours give him an advantage over many colleagues in the independent catering industry.

"We have dinner time from 6pm to 7pm.

That means we're done relatively early, of course."

Cooking with fresh and regional food is important to him, as is creative work in the kitchen.

The predominantly young guests are catered for in the morning, at noon and in the evening, “although there are often packed lunches at midday because people are of course on the road a lot”.

Wednesday is veggie day.

"There's been a great response to that," says Baur.

The "Three Types of Dumplings" that he and his team cook are well received, as are the vegetarian burgers that he will be serving on the day of the newspaper interview.

"And when 15 or 16-year-olds tell you that they think the food is good, that makes you proud," says Baur.

Hostel manager satisfied: "Absolute stroke of luck"

For hostel manager Strobel, his new head chef is an "absolute stroke of luck".

Because of course he also feels the shortage of skilled workers.

"When we advertise vacancies, we often hardly get anything in return."

"We've been fighting for months." It is therefore all the more important to show that tourism also offers down-to-earth jobs close to home, says Strobel.

He would also like more locals to see what tourism brings them.

This is also the aim of the Tölzer Land Tourismus campaign “Charmant miteinand”.

"The entire infrastructure or the many sports facilities" would probably not exist without tourism, says Strobel - just like many jobs.

"Tourism makes Bad Tölz an attractive location for young families." Baur agrees.

"We really have a lot on our doorstep."
