Hanukkah is right around the corner, and everyone knows there is no better way to celebrate the holiday than eating pancakes.
If they come in a much healthier version than we are used to, then that is definitely a reason to go out to a party - and that's exactly what Tamar Yedin's recipe, a clinical dietitian and consultant for the Herbalife company, does.
Ingredients (for 8 servings)
Whole cauliflower, washed and broken into segments
2 medium sweet potatoes, peeled
1 grated carrot
3 eggs
2 tablespoons of bread crumbs, made from wholemeal flour
A tablespoon of olive oil
salt and pepper
Instructions:
Roughly chop the sweet potato and cauliflower and grate the carrot.
Put all the ingredients in a food processor, operate until a uniform texture is obtained.
There is no need to pre-cook the vegetables.
Add the rest of the ingredients.
Make non-flat meatballs and arrange in a pan with baking paper.
Bake in an oven preheated to 200 degrees for 15 minutes.
Cool for about 10 minutes before eating.
