Components (for about 7-10 units)
• Grated medium zucchini
• Half a medium sweet potato
• 2 tablespoons of hummus flour (hill, not mountain)
• A little salt
• Black pepper
• Half a teaspoon of turmeric
Instructions:
1) Mix the ingredients well and leave for 10 minutes.
2) Apply a little olive oil in a pan, and with a spoon pour pancakes - and fry each side until brown without drying out.
If you want, you can replace the sweet potato with all kinds of vegetables such as grated onion or carrot, add parsley, cilantro, green onion, etc. - it's just important to have a vegetable with liquids so that the hummus flour will absorb it and stick to the fritters instead of the eggs.
It is important to note that each medium tablespoon of hummus flour replaces an egg.
