Ingredients
100 grams of dark chocolate, you can also use chocolate chips, roughly chopped
1 teaspoon baking powder
1 single medium-sized roll avocado, pitted, peeled and mashed into a puree with a fork (about 180 grams of avocado)
2 tablespoons of cocoa powder
½ cup white sugar
125 grams of white cheese 5% or 9%
1 egg unit
½ buckwheat, you can also use cornflour

Preparation
How do you make Goat's Chocolate Avocado Muffins?
1 Heat an oven to 170 degrees and grease a muffin tin.
2 In a bowl, mix the egg, avocado puree and white cheese to a uniform mixture.
3 Add the baking powder, sugar and flour and stir gently to a uniform mixture.
4 Add most of the chocolate chips/chopped chocolate and incorporate it into the mixture.
5 Divide the mixture between the muffins - the mixture should fill the recesses up to 3/4 height.
Sprinkle over the chocolate that you kept aside.
6 Bake for 15 minutes or until the muffins swell and stabilize - a fork inserted into the mixture should come out clean.
7 Let the muffins cool completely (their volume decreases and that's fine) before serving.
Can be refrigerated for 5 days.
