On Wednesday morning, Christmas stollen were again gilded in the Sparkasse cash register – at least on paper.

Fürstenfeldbruck – Six bakers from the district – Nau, Hünsche, Reicherzer, Rackl, Wimmer and Drexler – submitted 32 pastries for the annual test.

In addition to the classic nut, poppy seed and fruit stollen, there were also a few exotic ones.

The Puchheim baker Maximilian Hünsche submitted his "Maxis Macadamia Stollen", the Jesenwang bakers Josef and Ulrich Drexler a "Babystollen".

The trained bread tester Manfred Stiefel - he is also allowed to evaluate stollen - awarded 24 stollen the grade "very good", seven received the grade "good".

New this year: A pastry failed the test.

"The stollen was baked too long," explains Stiefel.

As a result, the Christmas cookies got a crust and tasted bitter.

According to the expert, it is more reminiscent of a biscuit and not of a stollen.

This year, passers-by were once again able to come by and try the test, which lasted several hours in the foyer of the Sparkasse.

"It's like Christmas and New Year together," said a man who was handed several pieces of stollen to try out by district master craftsman Franz Höfelsauer.

In the past two years, the exam took place during the lockdown, behind closed doors, in the office of the district trade association.

The tunnel test is also non-profit, explains Höfelsauer.

“Each company sold two to three more stollen.

We donate these to the Theresianum nursing home.”

For Manfred Stiefel from the German Bread Institute, the stollen season is slowly coming to an end.

He has been testing Christmas cookies throughout Bavaria and also in parts of Baden-Württemberg since October.

A total of 900 tunnels had to face his critical senses.
