According to a new study, banana peels that undergo bleaching and drying and that are later ground until they become flour, can also be turned into delicious baked goods that taste similar (and even better) than wheat flour products.
The study also shows that in a blind tasting of cookies made from banana peel flour, the subjects reported that they were just as satisfied with the flavors as they were with cookies made from regular flour.

If your curiosity hasn't yet made you go make a pastry based on banana peel flour, then know that the peel is full of cancer-fighting minerals and nutrients - and it can even stay on the shelves for three months (at room temperature).
However, it is worth noting that the addition of too much banana peel flour made the cookies harder and get a slightly brown color, probably due to the many dietary fibers in it.
Although the study tested the effect of banana peel flour on baked cookies, it suggests the possibility that this is also good for breads, cakes - and even pastas.
An example of this can be found in the fact that last year a study was published, according to which the banana peel is used as a natural food coloring for the baked product, in addition to its high nutritional value.
