Researchers have shown that people can be persuaded to choose to eat food with a smaller "environmental signature" (meaning that the path the food took to your stomach was less harmful to the environment than other foods).

So is it possible, for example, to convince people to eat less red meat because growing it causes more greenhouse gas emissions?

The findings of the study conducted at Harvard and Johns Hopkins universities, and published in Jama magazine, found yes.

The study was conducted on a nationally representative sample of US residents and three groups were presented with three meals to choose from with different captions.

The control group was shown meals with a high environmental signature and a low environmental signature - without special labeling.

The other two groups were shown the same meals, but one had a green label - and an inscription that the meal has a low impact on the environment (e.g. vegetarian meals or fish and chicken), and the other group meals with a red label with the inscription that it has a significant negative impact on the environment (e.g. red meat) .

The results showed that approximately 23.5% percent of the subjects avoided buying meals with the red label - compared to the control group.

In contrast, 9.9% of people preferred the meal with the green label over the control group.

In the explanatory notes to the study, the researchers wrote: "Animal-based food production, mainly cattle-based food production, is responsible for 14.5 percent of the world's greenhouse gas emissions and is one of the most important contributors to the climate change process."

The researchers also noted that in the United States "the consumption of meat, especially red meat, consistently rises above the recommended levels according to the guidelines of the national nutrition agencies. Therefore, changing the dietary pattern of humans towards menus with a smaller amount of red meat will reduce greenhouse gas emissions by a rate of up to 55%

"Regarding this, we discovered that telling people that the type of food they eat has negative environmental effects was an effective act that directed them to eat more positive menus in terms of impact on the environment. This labeling was more effective than labeling green food dishes as healthy," the researchers concluded.
