A treasure of know-how already awarded twice.
Departmental champion of the Parisian galette competition in Gironde since December, the craftsman won the regional edition of the competition on Wednesday.
A beautiful adventure marked by perseverance.
An employee of the bakery for 4 years, this
27-year-old craftsman had been harassing his leaders for "
a while " to participate.
As soon as he arrived, from the puff pastry to the composition, Kevin Boudard had already "
changed everything
" about the recipe for the galette.
“
It sparked internal debates,
” readily admits Loïc Cassagno, owner of the bakery with his brother, Yann.
In a South-West where the culture of the brioche kingdom dominates, the co-manager with a business school degree lets himself be convinced.

I'm not a pure baker so as the product was good and it sold very well... He won
", specifies the reconverted.

Already 1200 galettes des rois sold before Epiphany
A winning bet now.
Since Kevin Boudard's victories, customers have come from afar, well beyond the Bordeaux crown.
And the numbers are exploding.
Two days before the Epiphany celebration, 1,200 galettes have already been sold, compared to an average of 800 after King's Day in a typical year.
“
Our goal of 2,000 galettes will be largely exceeded if we manage to cook them in time
,” rejoices Loïc Cassagno.

In the kitchens, Kevin Boudard requisitioned all the staff.
Even the boss puts his hand in the dough to "
double the bites
".
The secret of its success?
A fine work of turning for an inverted puff pastry imbued with delicacy and a composition 100% with almonds (unlike a frangipane which also contains pastry cream, Ed).
Aware of the "
rare talent
" of the craftsman who has always expressed his desire to be a turner, the Cassagno brothers are considering recruiting a baker to make it possible.
