First, cut half a carrot, half a stalk of celery and half a shallot very finely to brown everything in a pan in a drizzle of olive oil.
The mixture should then be put together with the stuffing.

Bake veal rolls in the oven
The veal rolls are ready to be cooked.
The first solution is to put them in the oven.
To do this, simply place the paupiettes in a baking dish and drizzle them with a spoonful of olive oil.
It is possible to add a few sprigs of fresh thyme as well as pieces of garlic.
Half a glass of dry white wine and half a glass of water should then be poured into the dish.
Then it can be put in the oven for 35 minutes at 180°C.
Cooking veal rolls in a casserole
Casserole cooking is the second alternative for cooking veal rolls.
This cooking method is ideal for obtaining a tasty and melt-in-the-mouth dish.
It requires carrots and two onions.
First, peel and slice two onions, then cut the carrots into rings.
In the casserole dish, a knob of butter is used to cook the onions until they become translucent.
It is now time to add the veal rolls to the casserole and brown them.
Before complete cooking, add a tablespoon of wheat flour and half a glass of white wine.
The bottom of the pan should be scraped with a wooden spoon.
And to finish, a chicken broth as well as the carrot slices can be added to the preparation.
For even more flavor, it is possible to add a few sprigs of thyme or bay leaf.
The veal rolls should then simmer for 25 to 30 minutes, watching and stirring regularly.

How to cook veal rolls in the pan?
If you don't have a casserole dish, veal rolls can be prepared just as well in the pan.
Here too, a knob of butter is necessary before putting the rolls in the pan.
Over high heat, with salt and pepper, they should be browned for 5 minutes on each side.
Then comes the deglazing step by adding half a glass of white wine.
As with casserole cooking, scrape the bottom of the pan with a wooden spoon.
Then simply lower the heat to simmer the dish over low heat for 15 minutes.
A well-done veal roulade is a tender, chewy veal roulade when pierced with a knife to check for doneness.
In the pan, it is possible to add thyme, bay leaf, carrots or even mushrooms.
This dish can stand on its own, but it is also perfect when served with spaghetti or dauphine potatoes.
