The most passionate: Meraki

The place.

A simple storefront but a pretty interior, with wooden furniture, blue walls and an impressive marine fresco in a nod to Jules Verne, the most famous of Nantes writers.

We come without fuss in this “bistro 2 friends” (Maxime in the kitchen, Clément in the service), open mid-2021 place Viarme.

The plate.

Maxime, former chef of the Lamacotte (famous gastronomy near the cathedral), often uses plants to create his dishes.

His cuisine pays tribute to short circuits, summoning new alchemies.

As a starter, the fermented beetroot and radish carpaccio, smoked feta and herring and trout roe reveal a subtle balance of crunch and tenderness, confirmed by a pumpkin purée and its miso emulsion, spelled, roasted pumpkin seeds, soft-boiled egg .
