Lamb chops stew with dried fruits
Ingredients:
√ 6 lamb ribs
For the spiced flour mixture:
√ 1 cup flour
√ 1 teaspoon ground cinnamon
√ 1 teaspoon paprika
√ 1 teaspoon bhart
√ 1 teaspoon salt
√ 1 teaspoon ground black pepper
√ 1 teaspoon ground cinnamon

√ 2 chopped onions
√ 150 1 gram of dried apricots
√ 150 grams of seedless prunes
√ 1 cup of soaked

Method of preparation:
1. Mix the flour with the spices and flour the ribs.
Fry in a pan on both sides and set aside.
2. Fry the chopped onion in the pan where you fried the ribs.
3. Add the apricots and prunes and continue to fry for 10 minutes.
4. Add the bulgur and season.
5. Add the stock, bring to a boil and turn
off the heat.
6. Place the ribs on top of the bulgur and the dried fruits, seal well with foil and put in the oven for an hour and a half at
200 degrees.
Chicken with raisins, cilantro and raisin vinegar
Ingredients:
√ 1 kg defatted chicken fillet
√ 2 chopped onions
√ 150 g dark raisins
√ 150 g light raisins
√ 1 handful coarsely chopped coriander
√ 1 glass white wine
√ 8 cloves garlic
√ 1 tablespoon silan
√ 1 cup beef stock (or water )

Method of preparation:
1. Mix the flour with the spices and season the chicken.
Heat a pan with oil and fry the chicken on both sides.
Place the pan aside.
2. In a separate pan, fry the onion until golden. Add the raisins and coriander, mix and pour over the chicken in the separate pan.
3. Pour the wine into the pan with the chicken and bring to a boil.
Add the garlic, the silan, a little salt (the chicken is already seasoned) and the beef stock, bring to a boil and cook for another 7 minutes.
4. Remove from the heat and sprinkle 2 tablespoons of raisin vinegar over the chicken.
How do you make vinegar from dried fruits (figs/raisins/apricots)?
1. Fill a jar with well-washed raisins (or any other dried fruit).
2. Add 1 tablespoon of sugar and fill with water until completely covered.
3. Cover the opening with a napkin and close the jar.
4. Shake the jar a little every day - mixing prevents the formation of mold.
5. This continues for 20 days.
The resulting vinegar is kept for at least a year.
