In the case of gluten intolerance, a permanently gluten-free diet is important.
In many foods such as chocolate or cheese, however, the so-called gluten protein is hidden.
Frankfurt - If a gluten intolerance or gluten sensitivity is diagnosed, only a permanent gluten-free diet will help.
But giving up gluten is not as easy as it first appears.
Gluten is a protein that is also called “glue protein”.
It ensures that the combination of flour and water results in a tough dough.
It is therefore a component of many types of grain.
But simply doing without grain is often not enough.
Gluten can also hide in foods like chocolate, cheese or ice cream.
This is now reported by the
Frankfurter Rundschau

Gluten intolerance is also called celiac disease.
It is one of the chronic diseases because other organs can also be affected by celiac disease.
If an affected person eats gluten, this leads to inflammation of the mucous membrane of the small intestine.
Those affected often suffer from the following symptoms:
Diarrhea
Bloated stomach
Greasy or oily looking stools
Bulky and foul-smelling stool
weight loss
anemia
weakness
loss of appetite
Painful, itchy rash
mouth sores

Why is it so important to avoid gluten if you have a gluten intolerance?
If there are signs of gluten intolerance, a medical examination must be carried out to determine this.
Tissue samples are often taken from the mucous membrane of the small intestine for this purpose.
According to the MSD Manual, this examination is particularly important because celiac disease can increase the risk of cancer in the digestive tract.
According to the Institute for Quality and Efficiency in Health Care (IQWiG), a gluten-free diet is recommended for treatment, as well as the additional intake of vitamin and mineral supplements.
It is therefore particularly important for those who are ill to know which foods they should be careful with.
However, a healthy person should not do without gluten, as not doing so can lead to a health hazard.

The following foods may contain gluten
Many foods containing gluten are now marked with the international symbol: It shows a crossed-out ear of corn.
According to IQWiG, this means that a product contains a maximum of 20 mg gluten per 1 kg.
But if the symbol is not available, it is advisable to take a look at the list of ingredients.
Because even in many apparently grain-free products, the gluten protein is used as a binding agent.

In general, if you have gluten intolerance, you should always look at the list of ingredients.
According to IQWiG, once you have eliminated gluten from your diet, the gastrointestinal complaints can subside after a few weeks.
The success of the change in diet can also be determined by a blood test at the doctor's.
However, it can take a few months to a few years for the blood values to normalize.
That depends entirely on how badly the intestinal mucosa has been damaged.
Researchers have now also tested a remedy for gluten intolerance.
