The chard and spinach fritters, among other varieties, are one of those preparations that, even though the years go by, are still valid.
It doesn't matter that the trend is to eat less fried, they are present on restaurant menus and at home tables.
It is that this combination of textures is a temptation for all kinds of palates.

How to make chard and spinach fritters easy and fast
Of the salty fritters, these are the kings.
Is it because it is an excellent way to "cover up" a vegetable not so loved by children?
Or because they are simply rich?
We do not know for sure what is the reason for their fame, but they have it well earned.
The fastest way to make them is to chop the chard (without the stalk) or the washed spinach leaves.
In a bowl, beat eggs with a jet of milk and add flour.
Mix until the mixture is a little thicker than that of the pancakes.
Add salt, vegetables and mix.
Ready the mix!
Spinach fritters with a garlic mayonnaise
There are
many ways to prepare fritters: with the raw vegetable, barely sautéed or boiled.
Each one will turn out different: if the raw vegetables are used, they are more colorful and with a more powerful flavor;
if the leaf is sautéed it will shrink in volume but will remain with an intense color.
On the other hand, if they are prepared with the vegetables boiled and drained, a large amount will be needed for a portion of fritters.
What they have in common is the pasta that surrounds them.
To achieve a very fluffy dough, add a little baking powder
(or use self-rising flour directly) and some people say that a splash of soda suits them better.
Another little secret is the smoothie.
"The fluffiness can be achieved by beating the egg well, which has the ability to retain air inside, achieving a smooth result," explains Yanina Osuna, chef at Biutiful bistró.
How to make sweet fritters easy and fast
Sweet apple fritters.
They reappear on rainy days or when the temperature drops.
They are
a dessert that can be prepared in a few minutes
and that with the same mixture you can bathe different pieces of fruit, flavoring the fritters instantly.
As in the case of salty fritters, you also have to make a mixture with eggs, milk and self-rising flour, but
sugar is added to make them sweet.
“
Beat the eggs with the sugar and, while continuing to beat, add the milk.
Add the flour slowly without ceasing to beat, once everything is well mixed we can assemble the fritters", says Gustavo Iribarren, head chef at the Rufino restaurant and adds: "The trick is in the batter
.
A good shake achieves perfect fritters”.
Once the mixture is ready, the chosen fruit is submerged
(strawberries, apple or peach slices, banana, etc.) and bathed with the mixture.
Cooking is the same as any fritter.
They are fried in hot oil and when they are removed the difference appears:
they are sprinkled with powdered sugar
so that it adheres to the surface.
Fried fritters and baked fritters: what's the difference?
Baked fritters, they come out less crispy than the fried ones.
Deep frying, that is, the one that covers the food completely with oil, is not as harmful as it seems.
But, if it is done at the wrong temperature, it will result in oily fritters.

If the oil is cold, the flour absorbs more oil.
On the other hand, if it is at approximately 160°, it makes a crust and cooks well”, says Rodrigo Colombres, general manager and partner of Oporto Almacén.
“It is normal to think that baked fritters are healthier, but
if the frying technique is used correctly
– with plenty of oil and a correct temperature – not as much oil will be absorbed and
we should not worry
”, says Osuna.
It also clarifies that the main difference between the two lies in the speed of the procedure and in the finish:
frying is faster, and provides a particular texture and flavor.
Cauliflower fritters.
The Porto Almacén kitchen believes that
for it to turn out well in the oven they should contain less water, to achieve firmness.
“They can be molded into a muffin plate, for example,” says Colombres.
Another option, if you don't want to submerge them in oil, is to cook them on the grill or in a slightly oiled pan.
In this case, using the same mixture as for the classics, what will be obtained will be
a fritter more similar to a pancake.

How to make fried fritters do not remain oily
The oil for frying fritters must be between 180° and 200°.

Use new and clean oil.
It should not have remains of other foods or be burned.
It must be abundant so that even and uniform cooking is accomplished.
The temperature should be around 180° to 200°.
Fry in small batches, so as not to lower the temperature of the oil.
Do not prick with a fork, since poking them can penetrate oil into the fritter.
