Semolina - the selected part of the wheat grain, is an excellent raw material for a variety of dishes and pastries • Here are two recipes, one for a fine Moroccan soup

On days like this I really like to eat hot porridge with cinnamon.

It relaxes me.

In general, foods with semolina give me a pleasant feeling.

And there is also the perfect grandmother's medicine - soup.

For us it was the spelled soup, prepared when we were sick.

It is based entirely on water, semolina, garlic and coriander, and is considered a health soup.

Because I loved it, I sometimes pretended to be sick so that my mother would make it, with its great taste and grainy texture.

What is semolina?

Our ancestors would grind the wheat with millstones and filter everything in a sieve.

Part of the kernel, very rich in protein, is broken and remains in the sieve.

The semolina is actually a grinding stage, before the wheat kernel has turned into flour.

These grains were considered tastier and more expensive than the ground flour, and from there the semolina got its image as the best and best part.

In the kitchen, semolina is a wonderful raw material, which can be used in a variety of ways, in savory and sweet dishes and pastries.

the ingredients:

Olive oil

To fill:

√ 1 chopped onion

1/2 kg of ground beef (it is important that there is also fat)

√ 5 chopped garlic cloves

√ 1 bunch of finely chopped parsley

√ 150 grams of roasted pine nuts

√ 1 flat spoon bhart

√ 1 tablespoon of salt

√ 1 teaspoon of cinnamon

For the dough:

√ 1 kg thin bulgur soaked in hot water

√ 1/2 1 cups semolina

√ 1/2 cup of water

√ 4 tablespoons of flour

√ 1 teaspoon Bharat

√ 1 teaspoon of salt

√ 1/2 teaspoon of cinnamon

Preparation:

1.

Prepare the filling: fry the onion in a pan until golden.

2.

Add the minced meat and fry while stirring to crumble it.

3.

After 7 minutes, add garlic and mix well.

4.

Add the parsley, pine nuts and spices, mix well and remove from the heat.

5.

Mix the dough ingredients.

Mixing with semolina makes the dough pleasant and easy to work with.

If it is a little dry, add water carefully, so that it is not sticky.

6.

Grease a mold with olive oil.

7.

Spread 1/3 of the dough on the pan, the layer should be thin and uniform over the entire pan.

8.

Sprinkle over the meat mixture.

It is very important to fasten the meat well to the dough.

Spread the rest of the dough on top to completely and evenly cover the meat, and tighten well.

10.

With a knife, cut rhombuses in the dough from two and three stripes.

11.

Pour a little olive oil and bake at 200 degrees for 30 minutes, until the top layer is golden.

Whisper soup

the ingredients:

√ 6 chopped garlic cloves

√ 1/4 cup olive oil

√ 1/2 tablespoon of salt

√ 1/2 teaspoon turmeric

√ Freshly squeezed juice from 1/2 lemon

√ 1 bunch of finely chopped cilantro

√ 2 liters of chicken stock or water

√ 1/4 1 cups semolina

Preparation:

1.

In a soup pot, fry the garlic in the olive oil on a medium flame, until golden.

2.

Add the spices and lemon juice and fry for another 5 minutes.

3.

Add the cilantro and the chicken stock or water and bring to a boil.

4.

After boiling, lower the heat, add the semolina and cook, stirring constantly, for 10 minutes.

5.

When serving, it is recommended to sprinkle a little fresh cilantro on top for decoration.
