(CNN) --

Guy Savoy, who has been hailed as the world's best chef, has lost one of his Michelin stars.

His Monnaie de Paris restaurant was awarded three Michelin stars by the Michelin Guide in 2002, according to the restaurant itself, and maintained that status for two decades.

The establishment also led the selection of the best restaurants in the world 2023 by the Parisian guide La Liste for the sixth consecutive year.

However, its status was reduced to two stars in the latest edition of the Michelin Guide France, which will be published next week, the Michelin Group confirmed in a statement on Monday.

Savoy was told about it in a private conversation with the international director of Michelin Guides, Gwendal Poullennec, along with chef Christopher Coutanceau, whose marine-themed restaurant in La Rochelle, southwestern France, will also be downgraded.

"We are fully aware of the impact of our decisions on the affected restaurants," the Michelin Group stated in the statement.

"We maintain a relationship of trust with gourmets and our readers. They expect our recommendations to be serious and reliable to guide them in their choices."

The Michelin Guide said it was in the process of contacting other restaurants to have their stars removed, but said the ratings are "by no means permanent" and are reassessed annually by its inspection teams.

In 2019, Marc Veyrat became the first chef to sue Michelin, following the downgrading of his Haute-Savoie-based restaurant La Maison des Bois to two-star status.

The decision was attributed to the cheese used in the soufflé.

However, the court ruled against him, arguing that the chef had not provided evidence that the demotion had caused him harm.

Savoy began training as a chef in 1968, at the age of 15, and spent the next decade working with chefs and in various restaurants in France, according to his website.

As a child, he would peek at the food being prepared in the pans in the kitchen of his family's restaurant, La Buvette de l'Esplanade, in Bourgoin-Jallieu, France, according to Michelin.

He opened his first restaurant in Paris in 1980, which moved to more spacious premises in 1987, before finally locating in the French National Mint and Stamp building, La Monnaie de Paris, in May 2015.

Designed by architect Jean-Michel Wilmotte, the restaurant features six dining rooms, tall windows, hand-painted smiley face plates, stained glass water droplets, and a backdrop of the Seine River.

CNN has contacted Savoy for comment.
