This is what
the French Morgan Chauvel
(a computer engineer from Nice) must have noticed when, for work reasons,
he disembarked in the capital of the Río de la Plata in 2010.
During his stay he began to go through the neighborhoods of Buenos Aires in search of breads that were up to the fame and quality of the baguette, fougasse, michette or the "mount dessus" of his native region.
He realized that
the City lacked variety and added value
and came to the conclusion that this scarcity could be turned into an opportunity
.
It didn't take him long to make the decision to open a French bakery.
He returned to his country to train in the trade and finally returned in
2012 to inaugurate (with two partners) the place of his dreams
located in the heart of the Palermo gastronomic scene.

The bakery quickly
became known for the quality of its sourdough baguette, for the offer of artisan breads
– brioche, country, rye, wholemeal, walnut and seed flour – and for its
delicious croissants, pain au chocolate, canelé and éclairs.
The word of mouth of foodies definitively consecrated the proposal that, today, is considered, with merit,
part of the restricted group of French pioneers who promoted and positioned
the concept of
quality boulangerie
in Buenos Aires.
Last year Chauvel presented an
evolution of the concept
without losing, at any time, the connection with the original idea.
He decided to extend the opening hours by adding to the bakery-pastry-cafeteria offer some
cooking options that broaden and complete the French “experience”.
