"Green I want you green." Weird to say it in the middle of autumn, right? But that's what they'll feel when they walk into the grocery store and see the prices of everything but green vegetables go up. Pumpkins, spinach, arugula, chard are at a very good price, and on top of that you get divine specimens.

Corn is also affordable, so let's use them all! As a recommendation, if you buy many green leaves, to preserve them I suggest that you wash them very well and dry them gently with a canvas or with the vegetable dryer. Once clean, place them in a container and cover them with a tissue paper napkin barely splashed with water.

Spinach and pumpkin omelette. How delicious an omelette to start the week! It is light and healthy. This version has feta cheese, which is goat's. It is delicious but expensive, so you can supplant it by the cheese you have at home.

Rice stew with potatoes. Rich, satisfying and economical! A stew to make quick and enjoy slow. If you want to give it a little more color, you can add peas and corn kernels.

3. Wednesday, May 17

Milanese hake fillet with Roquefort. It's a dish I love. The softness of the fish with the taste of Roquefort makes me happy. Of course, not everyone likes the powerful aroma of blue cheese... but no problem! You can make the same sauce by using a more neutral cheese to bathe the filet.

4. Thursday, May 18

Vegetarian stuffed pumpkins. This is a dish that reminds me of my childhood... I think it is no longer "fashionable" but it is a simple and economical recipe that should not be forgotten. If you want them meat, use the same fillings you would make for empanadas. Of course, the grated cheese from above, is not negotiated. It looks great in both cases.

5. Friday, May 19

Chicken and leek casserole.

Leek and chicken casserole. Chicken and leek get along very well. It is one of those combinations that cooks use with their eyes closed. This cake is very simple and when cooked with the lid (empanada) generates a spectacular condensation of flavors.

6. Saturday, May 20

Moussaka.

Moussaka. It is a Greek lasagna, a typical Middle Eastern dish. It is prepared with layers of eggplants and does not carry dough. A cake to enjoy at all times. The classic filling is with meat, but it goes great with chicken too.

Polenta with vegetables and mushrooms. Autumn at the table. Golden mushrooms, transparent onion and a very warm polenta to give a delicious closure to the week. Secret: if you want a mega creamy polenta, use one part cream instead of water.
