There is an effervescence in the north of the France that is a pleasure to see and eat. The beautiful addresses multiply, make small, from the Oise to the Pas-de-Calais. The best-known leaders, Alexandre Gauthier and Florent Ladeyn, are young (44 and 39 years old), but they have already trained disciples. One of them remembers that Joël Robuchon, to whom he once announced his intention to settle in the Pas-de-Calais, had blurted out, as one presents condolences: "Good luck ...".
Lille, where Ladeyn had shown the way with his Bloempot, is now full of highly recommendable establishments: the starred Rozo left to expand in Marcq-en-Barœul, but it was immediately replaced by Purity (starred since March).
