Staff slump in Upper Bavaria: Many bakers shorten their opening hours

Many bakeries have reduced their opening hours. They just don't have enough employees.

County – The search for new staff remains unsuccessful. If employees are also absent – for example because they are ill – things get very tight. Werner Nau, head master of the bakers' guild in the district, has already restricted his opening hours. His shops in Bruck and Grunertshofen are no longer open as long as they used to be. "I have to make ends meet mostly with part-time and temporary staff," he says.

If someone is sick, things get tight

"If someone goes on vacation or is sick, I try to keep the store open at least until 13 p.m.," says Nau. His bakery in Grunertshofen is now only open on Saturdays from six to twelve o'clock. In Bruck, the opening hours are from Monday to Friday from 5.30 a.m. to 18 p.m., Saturday from 5.30 a.m. to 12 p.m. and Sunday from 8 a.m. to 11 a.m.

Nau's deputy, Ulli Drexler, who runs five bakeries in the Fürstenfeldbruck district and two in the Landsberg district, is struggling with the same problems. "On weekends, it is particularly difficult to be ready for action. In Pucher Straße, I had to close down completely on Sundays after the employee retired and I couldn't find a successor."

The problem of weekend work

Maximilian Hünsche allows his bakery in Puchheim to close completely on Monday. Otherwise, it is open from Tuesday to Saturday from 6:30 a.m. to 18 p.m., and on Sunday from 8 a.m. to 16 p.m. "I've been desperately looking for a full-time or part-time employee for months." The early start is not so much the problem, but rather the weekend work.

Master baker Martin Reicherzer in Brucker Hauptstraße had to drastically adjust his shop hours in the middle of the Corona period. Many waitresses have stopped, he reports, and have reoriented themselves. One has even become a tram driver. "The staffing level was getting thinner and thinner," says Reicherzer. Reicherzer is disappointed by the two Vietnamese women who began training with him as a specialist saleswoman and as a confectioner. "I imagined it differently. I would have gone through with it. But unfortunately, one of them is back home to get married and the other is attending language school."

"A few years ago, this would not have happened," said Hugo Fritz, a baker in Eichenau. He, too, has closed his shop on Sundays for two years. And his branch at the station is only open from 6 a.m. to 14 p.m. In the event of vacation or illness, it may happen that he closes the branch at the station completely.
