A true traditional Munich bakery is facing difficult times: The Hofpfisterei is running out of staff. The first shops have already closed, and now more are to follow.
The Hofpfisterei has been around for almost 700 years - today it is part of Munich's streetscape in many places with its blue and white logo. But now the company has closed several branches in the city area. The reason why the stove is now off there is that the Hofpfisterei lacks staff. According to the company, further business is expected to follow in June.
Instead of fresh organic farmhouse bread, you can currently look at a poster in the shop window at Müllerstraße 51. It says: "Unfortunately, we are closing our branch due to staffing." Similar notices also hang in the shop window of the Hofpfisterei branch on Barer Straße, as well as in Hohenzollernstraße. All three branches: simply gone.
Hofpfisterei closes low-selling businesses: "To solve staffing problems"
Initially, the company wanted to counteract the continuing staff shortage by opening some branches only in the morning, says company spokesman Thomas Lillpopp. But that was not enough. In addition, the shortened offer did not prove to be particularly customer-friendly.

For example, the Hofpfisterei is now completely closing individual sales outlets. "In order to solve the staffing problems, we are closing individual, smaller and lower-sales branches and relocating the staff freed up as a result to the other branch locations in order to then have reliable, all-day opening hours again," Lillpopp continues.
Around 2300 artisan bakeries are lost in Bavaria every year: "Tense situation"
The Hofpfisterei is not alone with the problem: "The personnel situation is generally very tense. Many apprenticeships remain unfilled, and the number of master students is declining," says Stephan Kopp, Managing Director of the State Guild Association for the Bavarian Bakery Trade.
And especially in sales, there has been "an extreme shortage of personnel" for a long time. In Bavaria, for example, around 2300 craft bakeries disappear every year. Often, traditional bakeries can no longer find successors, and interest in the craft has declined overall, Kopp complains.
Consequence of inflation: Hofpfisterei records sales losses
However, there are not only problems with regard to the staff at the Hofpfisterei. According to Lillpopp, the industrial bakery is also recording losses in sales. As a result of inflation, the number of customers has decreased. Hofpfisterei operates 157 of its own branches, 88 of them in the city and district of Munich.

According to Lillpopp, in order to be able to work economically, each individual location must be checked to see whether the branch is still worthwhile. However, this does not always mean the complete closure of shops, but also relocations to a new location in the immediate vicinity are planned.
According to Lillpopp, a new store will open nearby at the end of the year instead of the branch on Müllerstraße. The company hopes that the strategy will have a positive effect – so that a long tradition can hopefully continue for many years to come.
