The scarpaccia (pronounced more or less as "the Cardachians" but with p and without final ns- is a kind of cake typical of the province of Lucca, in Tuscany. An example of the best popular Italian cuisine, it only has four ingredients -zucchini, onion, flour and olive oil-, and its very easy preparation is one of those that make kitchen drones happy.
Although it receives this name for its presumed resemblance to a shoe (scarpa in Italian), it is all tenderness, and is usually prepared in two versions: the sweet, in the municipality of Viareggio, and the salty, in Camaiore. We bet on the second, as you can see in the video you have above. Last note: the original recipe does not have cheese and is delicious, but you can put it if you want an extra flavor (and salt).
