It is a dish that summarizes the values applied by Oriol Castro, Eduard Xatruch and Mateu Casañas in the restaurant Disfrutar, in Barcelona. On the one hand, the creativity that they have always shown, and that has led them to be in third place on The World's Best 50 Restaurants list; and, on the other hand, tradition, also present in the dishes that make up any of the two menus offered in the restaurant – Enjoy classic, with classic elaborations of the house, and Enjoy Festival, with a repertoire of around 28 dishes created this season, both at 255 euros.

To do this, they show how to make a spherification of chili crab, in a tribute to Singapore, source of culinary inspirations, which serves as an egg yolk on a fried white with its little dots. The egg is accompanied by a prawn with a spicy touch of garlic and chilli. It summarizes, as they explain, the essence of the cuisine of one of the most creative restaurants in Spain, which has two Michelin stars and three Repsol suns.
