Who among us does not use canned food, and who among us does not keep in these boxes the leftovers that remain or the dish prepared using the raw material that was in them? After all, we are all sinners in this.
You've probably noticed, after a few days that the box is in the fridge, even if it was covered, its taste changes and becomes strange. The reason for this – and make yourself surprised – is the metallic taste that the box itself gives it. The metals from which the cans are made (except silver, platinum and gold) form metal oxides when exposed to oxygen. As is known, canned goods are sealed in such a way that oxygen does not enter them, which prevents an oxidation process that ultimately damages the food itself.

Once you open the box, you actually allow oxygen to enter it. The oxygen that enters begins to react with the metal and food, which makes the food less tasty. But beyond that, it can cause the food in the open box to spoil quickly. The same is true if it is a simple sauce or a small amount of food. Therefore, it is advisable to avoid keeping food in an open can in the refrigerator.
According to the U.S. Department of Agriculture, "small amounts of food can be used from canned goods kept in the refrigerator" – but only for four days. If you want to keep the contents for a longer period of time, you can simply take the food from the can and transfer it to a glass or plastic box, preferably one that is airtight.
