Proud and brilliant representative of Roman cuisine well in his time, Giovanni Passerini was born and raised in Rome. He studied there and, after several stays abroad, enjoyed success at the bistro Uno e Bino. Before crossing the Alps to conquer Paris: first with the Rino micro table, then, since 2016, rue Traversière (12th), where he runs with his wife, Justine, the Passerini restaurant, the Passerina wine bar and the fresh pasta shop Pastificio.

There are many nods to his region of origin, of which the trippa alla romana is the signature dish. The forty-year-old still regularly travels to Rome - he was there recently for Bruce Springsteen's concert, of which he is a big fan - and welcomes the emergence of a real local gastronomic scene: "I have the impression that something is finally really happening! Many chefs have abandoned the pretense of wanting to sing the new Spanish cuisine or Parisian bistros...
