The days are getting longer, the temperatures are rising, and the sun is shining at full speed. What could be better than cooling off with a refreshing ice cream on a hot summer's day? And when it comes to refreshing, fruity delights, a rhubarb yoghurt popsicle is a must!

For those who only know rhubarb in cake form, such as a rhubarb meringue cake or a rhubarb pie from the tray, might be surprised by the sweet and sour ice cream. The highlight: crunchy pieces of meringue bring a lot of crunch between the creamy frozen yoghurt. We love popsicles and snack on it alternately with espresso martini popsicles.

These ingredients are needed for a quick rhubarb yogurt ice cream:

  • Rhubarb compote:
  • 250 g rhubarb, peeled and cut into pieces
  • 1 sachet of vanilla sugar
  • 50 g of sugar
  • 1 tbsp lemon juice
  • Yogurt meringue ice cream:
  • 500 g Greek yogurt (min. 10% fat)
  • 3 tablespoons of honey
  • 50 g meringue, coarsely crumbled
  • In addition:
  • "Popsicle" silicone molds
  • Wooden sticks

And always remember when enjoying rhubarb: don't throw away the peels under any circumstances, but rather conjure up delicious rhubarb syrup from them.

This is how easy and quick it is to prepare:

  • For the rhubarb compote: Mix rhubarb together with sugar and vanilla sugar, put in a small saucepan and let it steep for 30 minutes. Then add lemon juice and bring to a boil. Simmer until the rhubarb is tender and most of the liquid has boiled away. Allow to cool.
  • For the yoghurt ice cream: Mix yogurt with honey. Fold in the meringue.
  • Divide the rhubarb compote evenly into the silicone molds and pour over the yoghurt mix. If you like, draw patterns with a fork so that the compote and yogurt mix a little. Insert wooden sticks into the molds, smooth them out and let them set in the freezer for about 4 hours.
  • Snack!
