The annual tunnel inspection in Starnberg took place. The taste, consistency and smell of the stollen from the bakeries were put to the test.

District – Every year and punctually at the beginning of the Christmas season, the tunnel test takes place in Starnberg. This year, too, five bakeries underwent the quality inspection at VR-Bank. Among them are Benedikter from Andechs, Böck from Weßling, Boneberger from Gilching, Jakob from Feldafing and Lidl from Berg.

As an independent auditor of the German Bread Institute, Manfred Stiefel travels throughout Bavaria. In the district of Starnberg, he was able to award a total of 19 "very good" grades and ten "good" grades. In addition to stollen, gingerbread and fruit bread were also tested.

What is important during the exam

Willi Boneberger, head master of the Starnberg Bakers' Guild, is very satisfied with the results, as he does every year. He explained what was important: "During the test, the main focus is on appearance, taste, flavor and consistency." Taste all the ingredients. In addition, every detail is relevant in the examination. "First of all, a slice is cut off from the tunnel. If a little powdered sugar falls down, that's already a point deduction," the bakery owner reported. Even if chocolate sticks to the wafer of the gingerbread, this means a point deduction. "As soon as points are deducted, 'very good' becomes 'good'." Boneberger emphasized that the bakeries would use butter for baking instead of margarine, as is often the case with industrially produced stollen. This is reflected in the prices. "We attach great importance to quality. Of course, that costs a bit more," he explained. fwe

Bäckerei Benedikter: Fruit bread, wholemeal spelt stollen and cranberry stollen.
Böck Bakery: Butter stollen, nougat orange stollen, chocolate cranberry stollen.
Boneberger Bakery: Robert's Fruit Bread, Nut Stollen, Quarkstollen, Poppy Seed Stollen, Baumkuchen Lace, Boneberger's Gingerbread, Stollen Confectionery.
Jakob Bakery: almond stollen, raisin butter stollen.
Lidl bakery: almond stollen, confectioner's stollen, almond Elisen gingerbread, nut Elisen gingerbread.
