Before we start dedicating ourselves fully to the options of dishes for the holidays and end-of-year gatherings, I want to tell you about a sandwich that has a name and is recognized in many parts of the world.
This is the croque monsieur, an emblematic sandwich of French cuisine. It is believed that it was served in 1910, in a café located in Paris. It is usually prepared with homemade or molded bread filled with mold, cooked ham, Emmental cheese. Place béchamel (i.e. white sauce) on top very thick (you can spread it with grated cheese) and put it to au gratin in the oven.
The success of this sandwich led to the creation of other versions, such as the one we are going to eat this week: Croque-Madame. Which is actually the same sandwich but has a fried egg on top. The name "madame" (lady) is due to the fact that the fried egg is shaped like a hat, like the ones worn by ladies at the time the sandwich was created.
Have a great week everyone!

Chicken and poached egg salad
Chicken salad with poached egg. This recipe shows a way to make poached egg, which is great. Another way is to add it to boiling water and leave it for 6 minutes. Not one more, not one less. When you remove it, you have to put it in a bowl with cold water, if you have ice, better. You'll remove it and peel it carefully. You will see that when you cut it, the liquid yolk will fall and the white will be cooked.

Potato and onion omelette recipe.
Potato and onion omelette. You can have the potatoes and onions cooked beforehand and assemble the tortilla when you are going to eat. Always cook vegetables in a soft, deep fry. What do you mean? A lot of oil and at a low temperature as they should not brown, but should be cooked.

Garlic chicken from Canta el Gallo.
Garlic chicken. A dish that never goes out of style. It is very simple to prepare and, obviously, very aromatic. Serve with well-browned baked potatoes or white rice. The more neutral the garnish, the less it will compete with the flavor of the chicken.

Pizza with grilled aioli.
Pizza with grilled aioli. Make the dough ahead of time so that it is well elastic. To make the cheese topping richer, you can mix mozzarella with a little bit of a hard cheese that adds heat and intensity to the flavor. Aioli is a kind of garlic mayonnaise, so it adds to the pizza when it comes out of the oven.
