Before we start dedicating ourselves fully to the options of dishes for the holidays and end-of-year gatherings, I want to tell you about a sandwich that has a name and is recognized in many parts of the world.

This is the croque monsieur, an emblematic sandwich of French cuisine. It is believed that it was served in 1910, in a café located in Paris. It is usually prepared with homemade or molded bread filled with mold, cooked ham, Emmental cheese. Place béchamel (i.e. white sauce) on top very thick (you can spread it with grated cheese) and put it to au gratin in the oven.

The success of this sandwich led to the creation of other versions, such as the one we are going to eat this week: Croque-Madame. Which is actually the same sandwich but has a fried egg on top. The name "madame" (lady) is due to the fact that the fried egg is shaped like a hat, like the ones worn by ladies at the time the sandwich was created.
