The forty-year-old arrived, from Lucas Carton, to head the kitchens of the 5-star château-hotel in spring 2021.
He is replaced by Grégory Garimbay, thirty-year-old who won a star at the Auberge Nicolas Flamel (Paris 3rd) in 2022, before leaving the establishment last November.
