A few days before the Chinese New Year, on Saturday February 10, a teasing thought pushed me to reread the wonderful text by Pierre Desproges, written in 1981 for the magazine
Charlie Hebdo
, entitled “Foreigners are null”.
Everyone took what they had, including the French.
On the Chinese, and their “culinary traditions”, the most caustic and inspired humorist of the 20th century, distinguished two kinds:
“The communist Chinese, who eat children, and the nationalist Chinese, who eat canned goods.”
Of which act.
Let's not quibble.
What interests us now and here, in France where the brands - Parfums d'Italie, China Passion, Buffet Laqué, Chez Riz... - multiplied in the 80s, is to know where to taste fresh (animal) flesh and homemade dishes.
There is nothing obvious about this, even in Paris.
In restoration, the descendants of expatriates have often lost the authenticity of a 4000 year old heritage.
