What you should consider for good germination.
Opinions differ as to whether vegetables should be grown in February, even though the young plants are not allowed outdoors until mid-May.
Nevertheless, it works and also produces good returns.
It is particularly worthwhile to grow Mediterranean vegetables early on, as they often require a lot of time for the fruits to grow and ripen.
If you start early, you can give them even more of the sun they need over the course of spring.

Pepper seeds take about ten to 20 days to germinate.

Even though there is still plenty of time for growth in February, the germination of vegetable seeds can be accelerated using various tricks.
For example, by pre-soaking the seeds in chamomile tea or cutting off the seed tips.
A germination test in advance is useful if the seeds are a little older.
It's best to sow the plants in mid-February - if you do it too early, the young plants run the risk of sprouting too quickly.
Then the following Mediterranean vegetables can be added to the potting soil:
artichokes
eggplant
chili
paprika
Pepperoni
Fennel (vegetable fennel)

With varieties like tomatoes and zucchini, it's better to wait until mid-March or April.
If you have a greenhouse, you can grow tomatoes as early as the end of February.
Peppers and chili require high germination temperatures of 20 to 25 degrees Celsius and high humidity; for artichokes, eggplants and fennel, around 18 to 22 degrees Celsius is sufficient.
A sunny spot by the south window works well.

Pricking out young plants is important for growth
To ensure that the young plants develop strong roots, the seedlings should be pricked out after a few weeks.
This is usually due as soon as the first two leaves appear, which follow the cotyledons.
Now you separate the strongest young plants and place them in nursery pots.
