When he talks about his life, his family and the unbreakable bond they had with Italian food, his voice becomes slow and deep.
Claudio D'Oro remembers with feeling his mother Francisca (Sicilian), his father Francisco (Campano
), his aunt Teresa and her pasta (the Ciccarelli) and his maternal grandparents (Maria and Gabriel) who emigrated to Argentina to build a better future. .
However, they never
lost their culinary customs, on the contrary, they maintained and strengthened them to appease the “long distance.”
Claudio and his brother Norberto were born and raised in the new homeland, nourishing body and soul with that precious heritage.
The history of D'Oro Italian Bar
In 1989 they traveled to Rome determined to connect with their roots.
They immersed themselves in the daily life of the Eternal City and its idioms.
They learned the subtleties of the language.
They incorporated the fundamentals of traditional cuisine.
They became aware of the obsession with raw materials.
They incorporated uncompromising rigor in the preparation of the recipes.
They captured the secrets of a true Italian restaurant.
It was an experience that marked them deeply.
They returned to Buenos Aires excited.
The offer of authentic Bel Paese cuisine was scarce:
Filo, Piola, Bacaro, San Babila, Da Orazio, Bella Italia, Bice, Cipriani, Il Matterello, La Stampa and La Suburra were the stars of the Italian taste selection of that time to which they aspired to belong.
In August 1999 they inaugurated the establishment that today is about to celebrate its twenty-fifth birthday
.
In 2017 Norberto left and Claudio was in charge, currently accompanied by daughters Florencia and Francesca and Leandro (general manager).
The D'Oro Italian Bar Lounge
He understood, from the first moment, that the D'Oro were doing things seriously.
Typical imported products, mozzarella fior di latte, ciabatta bread, focaccia, Mediterranean panini, porchetta, pasta formats (dry and fresh) served just right and sauces reproduced with passion (and rigor) were the bricks that underpinned the credibility of a proposal that, over the years, knew how to keep its principles intact.
They had the good sense to add the necessary touches so as not to be left behind in time.
What to eat at D'Oro Italian Bar
The letter is a balanced synthesis that demonstrates this.
The
warm insalata di pesce
fuses green leaves, pink salmon (moist and tasty), tender squid and prawns, strips of bell pepper, fior di latte mozzarella in bocconcini format and sesame seeds.
D'Oro Italian Bar
The nero mare and vermouth spaghetti
offer long black pasta (with squid ink) with a well-made finish that flirts with soft squid and prawns, tomatoes and the unmistakable contribution of Italian vermouth.
The radicchio and salsiccia (sausage) ravioli are great.
They offer a good balance between dough and filling.
The succulent heart of chicory and chorizo combines perfectly with a smooth gorgonzola sauce and a garúa of pecorino.
Cheese tasting to close at D'Oro Italian Bar.
