Radicchio doesn't necessarily have to be eaten cold.

The salad is also great baked as an oven vegetable.

It's prepared in just a few minutes.

If you like chicory, you will probably also love radicchio.

The types of lettuce are related to each other and have in common that they taste more bitter than iceberg, lamb's lettuce or lollo rosso.

The bitter substances, of which radicchio has even more to offer than chicory, are extremely healthy as they stimulate the activity of the liver and pancreas.

Radicchio can also be prepared in the oven.

However, you don't always have to enjoy radicchio cold as a classic salad; you can be a little more creative in its preparation.

Baked and out of the oven, the vegetables taste at least the same.

What you need:

  • 1 radicchio

  • 4 tbsp olive oil

  • Salt

  • 100 g cheese such as Parmesan, Pecorino or Mozzarella

  • Optional: 1 organic lemon, sugar or honey

To prepare, preheat the oven to 200 degrees (top and bottom heat).

Remove any wilted leaves from the radicchio.

Wash and dry the head of lettuce.

Quarter the radicchio and place it on a baking sheet lined with baking paper or in a baking dish.

Season with salt, drizzle with oil and top with cheese.

If you want, you can add garlic.

Sugar or honey softens the bitter taste.

Place the tray in the oven for about five to ten minutes.

Drizzle the radicchio with a little lemon juice.

The oven radicchio is ready.
