Despite their youth, Ellyott and Arthur Guy, 24-year-old twin brothers, set out to restore the nobility of an old charcuterie specialty: Champagne pâté.

These natives of Reims (Marne), now Parisians, have been busy and entertaining their people for several weeks, under the monumental glass roof of the new gourmet market of Saint-Ouen (Seine-Saint-Denis).

On the menu of their stand, this traditional dish, cousin of Lorraine pâté, composed of marinated meat stuffed in puff pastry and served hot with a salad.
