After twenty-five years in charge of the kitchens, including fifteen awarded three Michelin stars for Epicure, Éric Frechon has just announced his departure from Bristol.

He will leave the Parisian palace, where he also orchestrated 114 Faubourg (one star), Café Antonia, room service and banquets, on April 15.

The name of his successor has not yet been communicated, while the Michelin Guide will reveal its new stars as well as its downgraded ones on March 18.

The Norman native, former second in command to Christian Constant at the Crillon, explains his departure from 112, rue du Faubourg Saint-Honoré and takes stock of an experience which saw him create numerous signature dishes and train an entire generation of leaders.
